To start, ANYONE can go up on the US Western District's website, read this case and download or print documents. Somervell County Salon is a media outlet, which posts open records regularly on all types of topics, and records video, and can certainly exercise freedom of speech here.

5/3/2016- Turks seeing 2 day extension of time to file response.
5/4/2016 Judge Walter S Smith issues an order denying the motion to quash. ("Ordered that the Motion to Quash or for Protective Order and Motion to Stay filed by Defendants Somervell County Hospital District and Ray Reynolds is DENIED as moot" ). Some interesting parts.

etc- go read the document above for the full commentary.
5/4/2016 Order granting motion of extension of time to file response (from 5/3/2016)
5/6/2016- Reply to response to defendants response to plaintiff's mition to compel request for a status conference and request to modify scheduling order, filed by Albert Turk
I somehow missed in reading the court documents that this blog website Somervell County Salon was mentioned in the defendant's response as a footnote, as a justification for a Protective Order in document 45 by Somervell County Hospital District and Ray Reynolds

So the defendants are apparently insinuating that there is something inproper or underhanded with a news media site garnering information, including through open records requests or going to internet court websites and viewing public information which can be downloaded and disseminated. Surely also the defendants are not trying to say that any private citizen cannot talk to any other private citizen, or that a member of the news media cannot choose to converse with whoever she wants. Oh, they are.
From document (Turk's side)
